Though the weather has not been very cooperative thus far, baseball season is upon us. Practice and games lead to busy evenings, but with some planning ahead you can skip the drive-thru and feed your family a healthy dinner. <br />

Last year I found myself slipping into yet another food slump. Those recipes I'd made that I loved were getting OLD! I made the decision to become a Wildtree Representative and our menu has been spiced up (quite literally!) ever since. We are enjoying new-to-us meals each week and I'm coming out of my comfort zone and trying new recipes I would have never considered before. <br />
<br />

This season has been a wild ride and one for the record books. Our family has followed every step of the way and today we are celebrating the first championship in 108 years with millions of others! A day we'll undoubtedly always remember.<br />

Our family bleeds Cubbie blue. I have cheered for the Cubs as long as I can remember and have ensured my kiddos will pass the love of the Cubs on for generations to come. It is so much more than a game: it's tradition, passion, and family togetherness all rolled into one.<br />

Each April our house is abuzz with the new season. We dust off our gear on opening day and cheer on our favorite players and curiously check out the new additions. The backyard is filled with, "The Star Spangled Banner," play-by-play announcing, a rousing rendition of, "Take Me Out to the Ballgame," and, if we're lucky, "Go Cubs Go." <br />

It's tradition and just a normal day around our house from April to October. It is how I will remember my oldest boy's childhood. We knew he was going to be a die-hard Cubs fan very early on. He'd sit through countless games each season and take it all in. When he was a a toddler we welcomed a new member to our family: his imaginary friend Derek Lee. That guy went everywhere with us. By preschool he had changed his name to Geovany Soto and spent hours catching in his paper plate mask, bib, shin guards, and crocs. He now loves all things Javy Baez and Kris Bryant and aspires to be a Chicago Cub himself one day.<br />

All of our kiddos cheer on our beloved Cubs. They pride themselves on knowing the names of the players and follow along almost as carefully as their older brother at times. A trip to Wrigley Field is a celebrated occasion and they've all taken to saving up money for a Cubs ticket there next season.<br />

It is so much more than a game: it's creating memories. It binds us together.<br />
<br />
This year has been magical from start to finish. It all began with a trip to spring training where dreams really do come true. A young boy, who idolizes so many players on the team, had the opportunity to get up close and personal with his heroes. Photos, autographs, and simply soaking it all in was a dream come true. <br />

The whole family got into the spirit and cheered on the Cubbies in Wrigleyville West. We could sense that something was brewing then and all of the kids wanted in on the action. They all had the privilege to meet some of the Cubs young stars up close and snag some autographs. They have become prized possessions in this house.<br />

Our Cubs enthusiasm has stretched from the mountains, to the prairie, and to the ocean white with foam. Everywhere we went we took our Cubs gear and took a picture. Deep down we just knew this year was going to be special.<br />

Our boys saved money to take a trip to a game at Wrigley Field in July. We saw the Cubs beat the Mets in a spectacular game and topped it off with a trip to Portillo's. A new tradition has begun.<br />

Late this summer we vacationed in Colorado while the Cubs were in town and took in a wild game at Coors Field. They didn't win, but it was a crazy night and one we'll always remember. My whole family was there and we cheered our hearts out despite the cold weather and rain.<br />

In early October we moved. The last night in our home was spent watching the Cubs in game one of the NLDS. We had a party and the Cubs won. Seems like a fitting end to our time there. Since then, we've settled into our new home and spent many nights biting our nails and cheering for the Cubs. To celebrate the postseason, I found us all a matching shirts, which we quickly dubbed our lucky shirts. We all wore them when they won the NLDS and NLCS. Everyone put them on for game six of the World Series and look what happened! You're welcome, Cubs!</div>

It all came down to one game and it turned out to be a game for the record books. Surely it will be a legend passed down to many generations of Cubs fans. Some of us kept on those lucky shirts, dirty and all, while others opted for another "lucky" shirt. Whatever the combination, it worked.</div>

It was a late, late night, but one we wouldn't have missed for anything. Our hearts were racing and our blood pressure was rising, but in the end, we came out on top. Today the Cubs are #1 and our family will have stories to tell for years about the amazing run of 2016. <br />

I remember starting out on this journey simply wanting to share my voice in a community of people who were able to relate. I desperately wanted to have something for myself. Ultimately, I wanted to feel relevant and heard. <br />

You see, at my house, my voice often gets lost in the mix of four kids and a husband. For a person who likes to be productive and feel purposeful, this can be a challenge. For many years I have questioned whether being a full-time mom was right for me. I've searched repeatedly for something to do outside of the house to not only generate income, but to feel valued and noticed. To have some tangible reward for doing my job. <br />
<br />
After many, many years of tossing ideas around, engaging in small side business ventures, and striving to find just the right thing, I opted to create my own business. A legitimate business. Paperwork filed and all! For the past six months, I have been a business owner.<br />
<br />
I am so excited to be the proud owner of a business I feel truly fits my personality and strengths. A mom-centered, organized, helpful service called the <a href="http://www.qcbusybee.com/">QC Busy Bee</a>. The idea of this business is simple: making life simpler by helping others get back some of their time. <br />
<br />
I cannot tell you how many times I have thought to myself, "I just wish someone would come and take care of (fill in the blank)." These thoughts are what drive my business model.<br />
<br />
To most employers, my resume would probably illicit some eye rolls and belly laughs. It would probably read something like this: "I have acquired some great skills over the years staying home with my kids. I can cook some seriously delicious meals, create a budget and manage the finances, efficiently grocery shop, plan some amazing vacations within a budget, plan fun events and parties, bake without nuts, and multi-task with the best of them."<br />
<br />
Well, to this employer, these skills are extremely valuable and they are the very services we offer to our customers. As we continue to build our customer base and receive feedback from the community, more services will be added. <br />
<br />
For the most part, we are only able to serve customers living within the Quad Cities, but there are a few, such as family-friendly meal planning and planning a customized vacation, that can span all geographical areas. <br />
<br />
Creating a business of my own has offered me the opportunity to take control of my future and work toward a goal. Just like anything else it will take time to grow and blossom, but I am looking forward to the challenges and rewards that lie ahead. It will take a lot of hard work, but it will be worth it.<br />
<br />
What starts off as a small idea has infinite potential to grow and I look forward to the journey. I have adopted a new motto: "The only thing standing between you and your dreams is you." It's time to get out of the way. <br />

The game times have wreaked a bit of havoc on my dinner schedule, but some early prep work has paid off. We've managed to eat on time and watch our beloved Chicago Cubs!<br />

The night of the one game wild-care match-up, we enjoyed some delicious Creamy Chicken and Mushroom Soup. I'm always on the prowl for new soup recipes to add to my Souper Sunday collection and this one was a winner.<br />
<br />
I found this recipe on <a href="http://damndelicious.net/2015/01/10/creamy-chicken-mushroom-soup/">Damn Delicious</a> and adapted it a bit. If you are looking for something on the healthier side that's easy to make, this is your soup! Enjoy!<br />
<br />
<u>Creamy Chicken and Mushroom Soup</u><br />
<u><br /></u>
1 T. olive oil<br />
1/2 rotisserie chicken, cut into pieces<br />
salt and ground pepper<br />
2 T. unsalted butter<br />
1 1/2 t. minced garlic (found in a jar)<br />
8 ounces mushrooms, thinly sliced<br />
1/2 yellow onion, diced<br />
3 carrots, peeled and diced<br />
2 stalks celery, diced<br />
1/2 t. dried thyme<br />
1/4 c. all-purpose flour<br />
4 c. chicken stock<br />
1 bay leaf<br />
1/2 c. half and half<br />
<br />
Melt butter in stock pot over medium heat. Add garlic, mushrooms, onions, carrots and celery. Cook, stirring occasionally, for 3-4 minutes or until tender. Stir in thyme. <br />
<br />
Whisk in flour until lightly browned. About one minute. Whisk in chicken stock, bay leaf, and chicken. Cook stirring constantly until slightly thickened 4-5 minutes.<br />
<br />
Let simmer for 20-30 minutes until all vegetables are cooked. Add half and half and heat through. Add salt and pepper to taste. <br />

The little lady and I decided to stay snuggled up in our warm, dry house today and naturally, bake something yummy! Today we opted for one of my favorite fall treats: apple crisp. <br />
<br />
My mom always made amazing apple crisp and I must admit, I have been able to follow in her footsteps. This yummy dessert is nut-free and the topping is so delicious you'll have a hard time stopping at one piece.<br />
<br />
So, from our house to yours, here's our version of apple crisp. Enjoy!<br />
<br />
<u>Apple Crisp</u><br />
<u><br /></u>
6-8 apples (4 cups), peeled and thinly sliced<br />
1 c. sugar<br />
3 T. flour<br />
1 t. cinnamon<br />
<br />
<u>Topping</u><br />
1 c. quick oatmeal<br />
1 c. brown sugar<br />
1 c. flour<br />
2/3 c. butter (not straight from the refrigerator, but not too soft)<br />
<br />
In a bowl, mix the apples, sugar, flour, and cinnamon. Set aside. In a separate bowl, mix oatmeal, brown sugar, flour together. Chop the butter through the mixture.<br />
<br />
Lightly spray or rub oil in a pan. Put in apple mixture, sprinkle topping mixture on top and back for 45 minutes in a 350 degree oven. Top with Cool Whip or vanilla ice cream.<br />

*May also substitute cherry pie filling or rhubarb for another yummy option<br />

With a new school year around the corner, I always find myself feeling a little nervous and weary about his safety at school. We are fortunate the school he attends has become much more accommodating since our initial struggles, but it still doesn't take the anxiety away about the potential for a slip-up to happen.<br />
<br />
You see, despite our best intentions, managing an allergy is simply not fool-proof. We learned this lesson the hard way this summer and it has caused my anxiety level to increase a bit more than normal as we enter this school year.<br />
<br />
We spent a lot of time on the road vacationing this summer. With this brought meals in hotels and restaurants and though we check labels and ask questions, one evening we had an unfortunate mishap at the hotel happy hour. <br />
<br />
As usual, we scanned what was available for people to eat: fruit, cheese, vegetables, chips, salsa, and some canisters of various cracker mixes. We scanned the mixes and noted that one very obviously contained a tree nut, the second was questionable, and the third contained Goldfish crackers. They also had a few bowls of candy-gummy worms and Reeses Pieces. <br />
<br />
We avoided the obvious dangers, Reeses Pieces and snack mix containing the nuts, and opted to let him munch on the Goldfish crackers and some pineapple. Seemed like a safe choice.<br />
<br />
After a bit we realized we had a problem. Our son began to complain the outside of his mouth was itching and burning. One look was all it took to know he was having a reaction. The red, itchy rash quickly spread all around his mouth and he then told his stomach was upset. Both tell-tale signs of a reaction. When he said his throat felt funny and made a squeezing motion with his hands, we decided it was time to administer his Epi-pen, give him Benadryl, and call 911.<br />
<br />
This was the first time we had experienced a nut reaction since the original incident when he was only 20 months old. My husband administered the Epi-pen and though our son may have been scared, he was very brave. The ambulance came and took him to the local ER where he was monitored for a few hours to make sure he had stabilized. <br />
<br />
Later that evening he returned with my husband to the hotel. He handled it all very well and we were relieved all turned out fine. All-in-all, we followed the emergency plan. We were prepared and had his Epi-pen and Benadryl on hand, so we were able to treat him in a timely manner.<br />
<br />
While I can't say we are happy it happened, we were relieved (once it was all over, of course!) all went smoothly. We all know what to expect now and our son did a fantastic job communicating the symptoms he was experiencing. <br />
<br />
This unfortunate event really goes to show how diligent we have to be. We learned a few lessons from this experience. We should have asked for a new bag of Goldfish crackers to be opened rather than taking them out of the canister and wiped down the table with a disinfectant wipe before eating anything. <br />
<br />
We still aren't sure if the container was cross-contaminated or the table had some nut residue on it. Either way, this experience solidifies the importance of advocating for his safety at school and all of the small steps it takes to avoid him coming into contact with his allergens.<br />
<br />
I'll give my little PSA regarding allergy awareness and safety at the beginning of the school year. If your child has anything containing nuts for breakfast, please have them wash their hands with soap and water before they head off to school. If your child has a student in their class with a nut allergy, please be respectful and follow the school's nut-free policy without complaint. <br />
<br />
It's the little things that make a huge difference. We all wish this wasn't the reality for our kids, but it's the hand they've been dealt. By being mindful and working together we can all do our best to cut down on the risk of exposure and, if all goes well, avoid an allergic reaction. <br />

My blog is one of those activities. I am so thrilled to have recently made the decision to step away from a commitment that was sucking up my time and energy, which will allow me to get back to the things I really love: trying out new recipes, baking, DIY projects, projects for my kids, and more!<br />
<br />
To get things rolling again, I want to share a taquito recipe my kids have come to love. It's quick, easy, and budget-friendly. My kids can be a bit picky at times, but they devour this finger food recipe. Let me know what your family thought!<br />

<u>Taquitos</u><br />
<u><br /></u>
1 pound ground beef<br />
1 clove, garlic<br />
1 cup salsa, more for topping<br />
2 t. chili powder<br />
Shredded cheddar cheese<br />
Flour tortillas<br />
Olive Oil<br />
<br />
Brown ground beef and garlic. Add chili powder and salsa and heat through. Place a few spoonfuls of the mixture in tortillas and add some cheddar cheese. Roll up and place seam down in a square baking pan lined with parchment paper. Continue until all meat is used up (I usually make 8 taquitos). Brush with olive oil and bake in the oven at 400 for 8-12 minutes, or until golden brown. They should be a little crispy and easy to pick up! <br />

It's been a few years since we've taken him to the allergist so we are all a bit anxious about what is to come. Since his allergy is severe, we do not have to take him to be re-tested each year as it is unlikely much will have changed. It sounds strange, but I am relieved we only have to do this every few years.<br />
<br />
When testing for allergies, the doctor performs a skin test where they put a liquid substance on his skin and watch for a reaction. At our first appointment, back when he was 20 months old, they had to wipe it off soon after application. The reaction to the peanut quickly spread up his back, where it was originally placed, all the way to his ears. They generally wait ten minutes: this took no longer than 2. <br />
<br />
A few years later we participated in a family allergy study at the Children's Hospital in Chicago. They opted to not even do the skin test since his first reaction was so bad. Instead, they just completed the blood test and I was so thankful he didn't have to experience it again.<br />
<br />
At our last appointment, the allergist applied the substance to his forearm. Within minutes he had a huge raised reaction. When it continued to expand to the size of a ping pong ball, we asked for it to be wiped off. No fun for our little guy. <br />
<br />
Unfortunately, peanuts are not his only allergy. Several tree nuts and shell fish are also on the list. We will see how Iowa City will want to proceed. These appointments are hard, as they cause much discomfort for him and I know he feels much anxiety about the process. Heck, I do, and they're not touching me!<br />
<br />
Visiting the allergist every few years is a minute part of his care. Keeping track of any change, even if it is for the worse, helps us manage his allergy on a daily basis to the best of our ability. We also always hold on to some hope these appointments will lead us to an opportunity where he can be treated for his allergies. There are many trials going on all over our nation and worldwide, but all in an experimental stage and not readily available to everyone.<br />
<br />
These appointments also confirm, from a medical standpoint, that his allergy is real and something to be taken very seriously. As silly as it sounds, there are many people in this nation who believe food allergies are made up. They scoff at the idea of nut-free classrooms and schools, imply parents of children with allergies are being overcautious, and make tasteless jokes about people suffering from this serious, and potentially deadly, problem. It sickens and infuriates me.<br />
<br />
I am not one to be shushed on this matter. In fact, I am quite outspoken. I am willing to educate people and advocate for not only my son, but others in his position. When it comes to life-threatening food allergies, ignorance is not bliss and when I come in contact with people unwilling to understand the seriousness of his condition, I press harder and bring the level of education and awareness to a whole other level.<br />
<br />
While I don't expect those who haven't walked in our shoes to fully understand, I do hope they are willing to look outside of their own desires and see the big picture. It is time for the insensitivity in this nation to stop and for the narcissistic behavior to end. Food allergies are real, the rate of people affected continues to rise, and people can (and have) died from them. It is no laughing matter and those who drag their feet and do not accept the seriousness of this condition frustrate me.<br />
<br />
If you've made it this far, thanks for staying with me. I am going to challenge you to be a light in the life of people who must manage this condition diligently each day. Next time you hear someone complaining about nut-free snack lists, classrooms, or activities, speak up. Be a voice of support and empathy. Positive influences outside of those living with a food allergy are needed. If each person who complained was met with one of support for these children and their families, it would begin to make a difference. <br />
<br />
My son is an amazing young boy who happens to have life-threatening food allergies. He is kind, loving, creative, and thoughtful. He should not be defined by his food allergy and excluded from activities because of it. He should live in a society of acceptance and one of empathy and kindness, rather than one of hostility and cruelty.<br />
<br />
We have been blessed with a wonderful support system of family and friends. My son's peers have rarely viewed the modifications made for his allergy negatively. Sadly, at times, it has been the parents who have struggled. Since preschool, he has been blessed with peers who have been aware of the dangers of his exposure to nuts and very protective of him. I hope, as he grows older, this continues. I pray the lights in the children continue to shine and the next generation is filled with kindness and acceptance of those who may be a bit different than them. <br />

My husband and I were silent, a rock in both of our stomachs, preparing for what we feared the most: that we had lost the baby I was carrying. <br />
<br />
I so vividly remember nearly every moment of those few days. We were watching American Idol when I felt something strange. I went to the bathroom to find I was spotting. My heart immediately sunk. At that moment I just knew our baby was gone. I called my OB and she tried to reassure me this didn't necessarily mean anything, but we should come in the next day to see what was going on. <br />
<br />
After a restless night of sleep, we took that drive. I sat in the waiting room hypersensitive to the other pregnant mother trying to distract myself by snuggling with my baby boy. Thankfully it didn't take long to be called into the ultrasound room. We nervously took the short walk and I tried to mentally prepare myself for the news. <br />
<br />
This ultrasound was so much different than the ones I had before. The large screen was turned off and the monitor was turned away from us. She didn't cheerfully show us our baby and point to all of their body parts or the beating heart. There was no beating heart. Instead, she quickly turned off the machine and directed us to a room down the hall.<br />
<br />
It was in that corner room where our doctor confirmed what we already knew. Our baby was gone. The doctor who we saw that day had delivered our son almost one year from that day. I remember thinking, "Wow, he has seen us through the circle of life." With an encouraging smile and a hug we were sent on our way. The tears didn't come at the doctor's office. We packed up our son and quietly headed out to our car.<br />
<br />
I am not sure if it was shock or denial, but it took a few minutes for those tears to come. We tried to be brave. Tried to convince ourselves it was just not in God's plan and it happens to many other people, but once we had to pick up the phone and call our parents the true sadness engulfed us both. The tears finally came and it took days for me to turn them off.<br />
<br />
We had made the decision to let nature take its course and hopefully miscarry at home rather than have a surgical procedure. In the wee hours of the morning nearly two days later it did. I was not expecting the physical pain to be so intense. I silently sat through those hours with tears streaming down my face willing for it all to be over. Once it was, the relief I expected didn't come. Instead it was just complete and utter sadness.<br />
<br />
My mother-in-law had come to help care for our son. I spent several days lying in bed crying and resting. I was angry with God and wondered why we had to endure this pain. I was so very sad and felt so very alone. It was a very dark time and took a long while before I could see the light again.<br />
<br />
That light came 6 months later when we learned we were pregnant again. It happened to be about a week before our angel baby was due. It was a bittersweet moment. I was so happy to finally be pregnant again, but so sad for the baby we had lost. Getting through the due date was so very hard, but once it passed I was able to nervously embrace my pregnancy. <br />
<br />
Thankfully our sweet little girl was born healthy on Easter Sunday. Looking back I find this day of her birth to be of great significance. Easter Sunday, when Jesus rose from the dead. A day filled with hope and promise. A day darkness turned to light. For us, the light shone so much brighter that day and continues to today. <br />
<br />
On that day we lost our baby, but we gained a guardian angel. I think of that baby often and still struggle through this time of year several years later. I was nearly twelve weeks into my pregnancy, that so-called "safe zone," when we found out our baby was gone. For almost two months we were able to rejoice in new life and love our little angel. While I cannot physically hold and love that baby, in my heart I do each day. <br />
<br />
So many people experience the sadness and grief of miscarriages each day. Losing a child is so very, very hard. One may think since we were never physically able to hold our child it might be easier, but it is not. The hope and promise of new life began the day we found out we were pregnant and so did the love we felt for him or her. <br />
<br />
Today I will hold my kids a little tighter and thank God for the four blessings he has given us on Earth. I will thank Him for blessing us with our little angel we affectionately named Peanut the day we found out I was pregnant. Today I will cry and grieve for the baby we never met, but I know someday I will meet our angel. Until then I will carry him or her in my heart each day.<br />

A few weeks ago we finally gave it a try and it did not disappoint. My kids loved it, we loved it, and we ate the whole pot! I made a few adaptations from the original recipe found at Cooking Classy. The biscuits are a must, so make sure you make them, too! Enjoy!<br />

<u>Chicken Pot Pie Soup</u><br />
<u><br /></u>
Rotisserie chicken, chopped in small pieces<br />
5 1/2 T. butter<br />
1 cup chopped yellow onion (I used half an onion)<br />
3 stalks celery, diced<br />
2 large carrots (3 medium), peeled and diced<br />
1 15 oz. can chicken broth<br />
2 russet potatoes, peeled and diced 1/2 inch<br />
1/2 t. dried parley<br />
1 t. dried thyme<br />
1 bay leaf<br />
Salt and pepper to taste<br />
1 c. frozen or fresh peas<br />
2 1/2 cups milk<br />
6 T. all-purpose flour<br />
1/2 c. heavy cream<br />
1 1/2 t. lemon juice<br />
<br />
In a soup pot, melt 1 1/2 T. butter over medium high heat. Add in onion, celery, and carrots and saute for 3 minutes. Add chicken broth, potatoes, parsley, thyme, bay leaf, and season with salt and pepper to taste. Bring soup to a boil, then reduce to medium heat. Press vegetables down into soup and cover with lid. Cook for 25 minutes, stirring occasionally. Reduce heat to low and stir in chicken and peas.<br />
<br />
In a medium saucepan, melt remaining 4 T. of butter of medium high heat. Slowly stir in flour and and cook for 1 1/2 minutes, stirring constantly. While whisking, slowly pour in milk and whisk vigorously to smooth lumps. Season with salt and pepper to taste. Bring mixture to a boil over medium high heat while stirring constantly. Remove from heat and stir in the heavy cream. <br />
<br />
Pour milk mixture into soup pot, making sure to stir constantly. Add lemon juice. Remove bay leaf and serve with warm Parmesan drop biscuits (recipe below).<br />

<u>Parmesan Drop Biscuits</u><br />
<u><br /></u>
1 1/2 c. all-purpose flour<br />
1 1/2 t. baking powder<br />
1/2 t. salt<br />
1/8 t. black pepper<br />
1/4 t. garlic powder<br />
6 T. butter<br />
2 oz. finely shredded parmesan cheese<br />
1/2 c. milk<br />
1/4 c. heavy cream<br />
<br />
Preheat oven to 450 degrees. In a mixing bowl, whisk together flour, baking powder, salt, pepper, and garlic powder for 30 seconds. Stir in parmesan cheese. Add butter, and using your fingertips, rub butter in mixture until evenly distributed. It will come together like the size of peas. Pour in milk and heavy cream and stir with a wooden spoon just until combined. (Batter should be lumpy and sticky). Drop using a large soup spoon onto a parchment paper lined cookie sheet. Bake for about 10 minutes. Best when eaten straight from the oven!<br />

I've got a new one we tried last night and loved! I typically make beef stroganoff on the stove, but this recipe was similar with a few extras that made it a hit with both the adults and (almost) all of the kids!<br />

<u>Crockpot Beef Stroganoff</u><br />
Source: Campbell's Soup<br />
<br />
2 cans cream of mushroom soup<br />
1/4 cup water<br />
2 T. Worcestershire sauce<br />
1 package sliced white mushrooms<br />
3 medium onions, coarsely chopped (I omitted)<br />
3 cloves garlic, minced (I used 1 1/2 t. garlic from jar)<br />
1/2 t. black pepper<br />
2 pounds boneless beef round steak, sliced into thin chunks<br />
1 cup sour cream<br />
12 ounces medium egg noodles, cooked and drained<br />
<br />
Stir the first 7 ingredients together in the crockpot. Add meat and make sure it is coated. Cook on low for 8-9 hours or until beef is fork-tender. Stir in the sour cream while mixture is still in the crockpot. Serve over noodles.<br />

Some parts of the holiday season, at least for me, are a little more stressful. Staying within a budget (I really try...really), trying to not to stress about the cute ideas I had but didn't have time to complete, and making a Christmas list for myself. <br />

If you're struggling with your list, too, I thought I'd share a few of my favorite things with you. Think Oprah-except not nearly as extravagant and for a busy mom with very little time for herself! To make it easy, I've divided it up into sections. <br />

-I love the <a href="http://www.kohls.com/product/prd-1349188/nike-flex-run-running-shoes-women.jsp">Nike Flex running shoes</a>. When I was running (it's been awhile), they were my go-to shoe.<br />

Their catchy little slogan? "How could you choose just one? When you've got more bears you've got more fun." This commercial runs nearly every half an hour on Nickelodeon Junior, which happens to be the favorite channel in our house. Each time it comes on I cringe and I just want to turn it off. The message they are conveying to my young impressionable children is certainly not what my husband and I try to instill in them.<br />
<br />
Our goal this year is to simplify and reduce the amount of "stuff" our children receive. While the marketing campaigns geared towards our children are trying to relay a completely different message, we are working hard to encourage them to choose a few things to put on their lists. Over the course of the past few weeks, I've encouraged them to choose their top three. While they typically change, there are a few items that seem to come up more often than others. In years past, we may have been inclined to purchase those most coveted items, but this year we are purchasing some and passing on the other ideas to grandparents. It is our hope this will decrease the amount of gifts they receive and instead of being overwhelmed with too many new things, they'll be able to enjoy what they really wanted the most.<br />
<br />
In my heart, I think this is the best gift we can give our children. To teach them that more is not better. To teach them to really think about their needs and wants and narrow their wants down to what they truly desire the most. This may be a lot to ask of children so young, but the sooner we can teach this lesson the better. We live in a society of excess. Our social influences are encouraging us to want more. To not settle for just one. To have the best even if we have a perfectly functioning item that's simply not the latest model. Never being satisfied is not a pleasant way to live.<br />
<br />
When will we decide this enough? When will our society, as a whole, be content with what we have instead of always desiring more? Never? Perhaps, but we are going to do our best to teach our children to appreciate what they have. To be grateful for what they receive and not disappointed because they didn't get everything they may have wanted. To realize there are children who have little to nothing and they are blessed in so very many ways. <br />
<br />
To encourage this way of thinking, our children need to be given age-appropriate opportunities to serve. They need to experience the gratifying feeling of giving. Our charity, <a href="http://www.fromcovertocoverproject.com/2014/11/a-big-gift.html">From Cover to Cover</a>, is doing a month-long book drive to reach a goal of 500 new books for children in need. This week my kids were asked to choose some books they thought other children may enjoy. When I first asked them to share what books they thought we should purchase, they were pretty adamant I should be purchasing books for them. We had a small discussion about the amount of books in our home and how some children have none. I could tell they were mulling this over in their heads and soon they were sharing some wonderful ideas. We purchased several books and they seemed very proud and pleased with their decisions. It is a simple act of service, one they can relate to, that will continue to shape them into children with servant hearts. <br />
<br />

I may be a little behind the times, but I've recently seen this little quote on several sites about Christmas for our children. I love it and wanted to share it with you. Not only is this great for our children, but it would also be awesome for a child in need. What a great family service project! I think it would be wonderful to encourage our children to purchase one of the wants off of their own Christmas list to be donated to Toys for Tots. While it may be hard for them to do, it would be a powerful experience to donate something they want themselves. </div>

This project for our charity, <a href="http://www.fromcovertocoverproject.com/">From Cover to Cover</a>, has become my fifth baby. I truly cannot tell you how important it is for our communities to realize how much these kids need us. Not just the Monroe students. The children at-risk in communities nationwide. I have found my purpose. Raising awareness about the striking correlation between literacy and poverty and doing something about it. <br />
<br />
Proficient literacy skills are a one-way ticket out of the generational poverty many of these children come from. It may seem like a daunting task, but it is quite possible to help some of these kids break free. This is why we have expanded our project to include sponsored literacy nights. It is why, each day, we spend time working to raise funds, gather volunteers, and make important community connections to spread the word about this huge need that lies right in our own neighborhoods. <br />
<br />
What do these children need? Books. They need home libraries. How can you further develop your reading skills if you have nothing to read at home? Having fewer than 25 printed materials at home is considered living below the poverty level. This is the biggest area I feel so many of us take for granted. Our children are abundantly blessed. Most of us have at least 25 books lying on a table or a book shelf in our living rooms. Combine that with those found in bedrooms, play rooms, and diaper bags and I am sure most of us are well into the hundreds. Could you imagine not having a single book for your child to read? It is a shame, yet a reality for so many.<br />
<br />
What do these families need? They need to be empowered. If a parent cannot read themselves, that does not mean they cannot help their child to become a better reader. We are going to work with all of the parents and guardians that come to our events and teach them strategies they can use, regardless of ability, while reading with their children. We are going to share the importance of reading together each night and walk them through how to ask questions and utilize pictures to further develop the skills of their child. <br />
<br />
What do these schools need? They need volunteers. More specifically, volunteer readers. There are many mentoring programs that do not require a significant amount of your time, yet they can make a huge difference in the life of a child. The more these children are surrounded by people encouraging them to read and reading with them, the more confidence they will build and, in turn, their desire to read will increase. They also need books. Quality, engaging, interesting books. We want kids to look at their classroom libraries and be excited about reading. Old, worn, outdated books just don't illicit the same amount of excitement as new(er), colorful, eye-catching books.<br />
<br />
I challenge all of you to find a local school in your community and help them fulfill one of these needs. If you live in the QC, I encourage you to join us in our mission. When I drove away from the school today and passed the lines at the shelters and soup kitchens, it really hit me how important our efforts truly are. We know we aren't going to save the world, but if we can change the world for a handful of kids, we have made a difference. You can make a difference, too. The question is, will you step forward and try?<br />

This seems to be the word most of us use to describe our lives. As a society we seem to wear our busyness with pride, but have we paused a moment to really examine what is truly making us so "busy?" Are these busy lives we are creating for ourselves and our families truly something to be proud of? We complain about how we don't have any time for homework, how we don't have time to cook and have a family meal, how we don't have time to...the list goes on. Our kids attend school all day, we pick them up and begin the evening rush, putting the very things we complain about not having time for on the back-burner. <br />
<br />
As parents, we have been entrusted with the responsibility of shaping the next generation. Impressionable eyes are watching us. Little ears are listening. These children are looking to us for guidance and it is our job to lead by example. What are we teaching our children by being so busy we don't have time to eat as a family? How are we teaching them to value education and be responsible when their homework is finished as they're running out the door because we were running from activity to activity the night before? How are we teaching them to be grateful for their blessings and serve others in their community when we are too busy to volunteer ourselves? The hard truth? We're not.<br />
<br />
The buzz on the street is we're raising an entitled generation of kids. While it's hard to hear, can many of you disagree? We have succumbed to the idea that our kids' happiness is measured by all of the "stuff" we provide for them. Activities, play dates, material items, the latest and greatest technology...ugh, the list goes on and on. They get what they want and then they ask for more. They are searching for a feeling of satisfaction that will never come because there will always be something better behind the next door. Oh, America, what are we doing?<br />
<br />
It is time to take a step back and truly evaluate our lives. If you are too busy for homework, family dinners, and nightly reading then perhaps it is time to make a change. Our children are depending on us to set limits and create a home environment that isn't so busy. Sure, it may be hard to say no to whatever it is they are "dying" to do next, but in the end, after the tears have dried and the tantrum has ceased, how refreshing will it feel to not be so overwhelmed and, you got it, busy? Let go of the guilt. There is no disservice in saying no. In time your children will thank you. <br />
<br />
I have always found that serving others leaves me feeling much more satisfied than any material item ever could. This is the feeling I want my children to experience: to realize that it is so much more fulfilling to give than to receive. It is my hope that by example I am teaching them to make time for others, to realize life isn't always about them. I want them to understand that as a family we are not too busy to serve.<br />
<br />
My eyes have been opened in the past year. While there are many, many people so willing to give of their time and talents, there are so many more who are simply too busy. So many programs rely on volunteers to fulfill their mission and sadly those programs will cease to exist if no one steps up. Everyone has been blessed with talent. It would be a shame to not use this gift to help others, be it your school community, local homeless shelter, youth program, you name it. You never how your contribution, whether big or small, may change the course of someone else's life. There is an opportunity awaiting everyone. My interpretation (take it for what it's worth) is someone being overwhelmed by God's love, beauty, and grace. This song runs through my brain morning, noon, and night and I can't help but feel I'm being spoken to. Lately my life has been so terribly busy, I am left feeling overwhelmed. Obviously this is not the true interpretation of the song, but when "I'm overwhelmed, I'm overwhelmed by you" runs through your head on repeat, perhaps it's time to listen!<br />
<br />
I may have bitten off more than I can chew. When I committed to our fall PTA fundraiser I had no idea how much time it would involve. Add in several upcoming engagements for From Cover to Cover, grant writing, and, oh, taking care of my family and house, I am left feeling incredibly overwhelmed by day's end. It is so hard to unwind and turn off my brain. I am overwhelmed. <br />
<br />
I have had little time to engage in hobbies I love and find relaxing. Reading, writing, and baking have taken a back seat to donation requests, typing up informational sheets, and writing long, tedious grants. My screen time is ridiculous right now and I am counting down the days where I can sit back with a good book and relax! Coincidentally, I have a book on the way called <u>The Best Yes: Making Wise Decision in the Midst of Endless Demands</u>. The irony is not lost upon me...trust me.<br />

We had the best two days celebrating this strong-willed little boy. He had so much fun and pretty much had a permanent smile on his face the entire time. We heard polite "thank you's," witnessed some sweet moments of sharing his new toys, and best of all, listened to his excitement and stories about his birthday. <br />
<br />
It is hard to believe that four years have passed since we welcomed him into our family. After a brief hospital stay, we brought home this tiny little boy and started our life as a family of five. While we have had many moments of joy and happiness, we have also had many of despair. For weeks our sweet little boy cried and cried in pain. Eventually we found dairy to be the culprit and things began to look up. We (who are we kidding here, I) spent night after night up with this little boy who did not want to sleep. Exhausted did not even put a dent in how I felt caring for three little kiddos. We endured 18 ear infections between him and his sister before both had tubes put in. Life was hard and all of this happened before he was even ten months old!<br />
<br />
We also witnessed three kiddos become the best of friends. We've seen them grow and watch out for each other. They spend their fair share fighting as siblings do, but for the most part, they get along great. There is never a dull moment. We've also seen sweet gestures of kindness. Today our oldest daughter gave her partner in crime three gifts: a picture she colored especially for him, a bookmark, and a quarter from her money jar. She wrapped them carefully in one of her blankets and brought it upstairs to give her brother. Precious.<br />
<br />
My oldest son does his best to not rock the boat. Our little guy is going through a phase where he wants to be first to do everything. He also doesn't like to lose. His older brother, with the sweetest of intentions, does what he can to please him. He is smart. He doesn't want to listen to the temper tantrum that will ensue if his little brother feels put out! <br />
<br />
I will be the first to admit there have been many times I was sure we were drowning. These four years have been hard. Sleep is a luxury and we have had few nights in the past four years where we have slept uninterrupted. Our little pack outnumbers us and at times their antics get the best of us. They are just kids having fun, but they can be a force to be reckoned with. Who knew words like butt, banana, and burp could elicit such laughter and craziness from these little people? <br />
<br />
Four years ago our lives changed dramatically. Through the ups and the downs one thing has remained: these kids are my everything. I look at them and thank God I have been blessed with four beautiful, healthy children who are the best of friends. I know these years will not be easy, but in the blink of an eye they will be gone.<br />
<br />
Happiest of birthdays to our sweet little guy. Your zest for life and energy are abundant. You give the best hugs and kisses and your smile shines through your eyes. I love you, sweet boy, and hope the next four years don't go quite so quickly!<br />

Back to school week is here. I am not sure how I feel about having three kids in school this year! Two full-time and one part. Hmmm...most of you would probably think I would be relieved to have a "break" in the action. There are messy days around here when I think the same, but once this becomes our everyday routine and the novelty wears off, I think there's going to be some sadness. <br />
<br />
Nearly four years ago we welcomed our third child. Our oldest was only 3 1/2 at the time, so to say life has been busy ever since would be an understatement. While it has been challenging and exhausting, every second of the chaos has been worth it. Our children have grown to the be the best of buds and though there are times this heavily works against our favor, I love seeing my big family grow so close together. <br />
<br />
We often say our middle children, just sixteen months apart, speak some sort of twin language. They are two peas in a pod and get into plenty of mischief together, but the just adore each other. My little guy is going to struggle with his big sister and playmate gone all day every day. Luckily he will have preschool four afternoons a week to fill the void and step out on his own, but I can imagine after school and weekends will be filled with as much playtime together as possible.<br />
<br />
People always tell you the days are long but the years are short. In the middle of the chaos it is hard to believe, but in the blink of an eye they are school-aged. Those innocent early childhood years where their biggest dilemma is what to play with on any given day are coming to an end. The time has come to head off to school to learn, make new friends, and experience the joys and heartache that will come with those friendships. <br />
<br />
Today I send my second baby off to kindergarten. Lately the tears have come in the late hours of the night or early hours of the morning. My sweet girl is off to face the real world and I pray she finds acceptance, kindness, and joy in her days at school. I hope we have taught her well and she, in turn, does her best to be kind and accepting of others. <br />
<br />
Another milestone reached. They seem to be coming all too quickly...Blessings on your first day sweet girl!<br />

Generally speaking I am a "take charge" person: an idea pops into my head, and without too much thought, I run with it. This has not always be the best option and I have not always been successful when taking this route, but it is the way my mind is programmed. At least that's how it's been programmed in the past. Now I find myself confused: questioning the next move and hesitant to take the plunge when the next big idea pops into my head. I find my indecisiveness to be paralyzing. Do I move forward with hope and optimism or do I retreat out of fear and doubt? These days I seem to be stuck somewhere in between. Non-committal, full of questions, and in limbo.</span></div>

This shift in thinking and decision-making has been challenging. I pray for clarity, some sort of a sign, the courage to move forward. I just know one of these days the vision will be clear. It is just so very hard to wait.</div>

We are not big soccer fans, but it was a good excuse for a party and fun to watch. Our original plan was to have a BBQ, but with a sketchy weather forecast, I switched it to a Mexican theme combined with some Americana-inspired food. What is more American than chocolate chip cookies or s'mores? Why not combine them? That's what I did today: stuffed S'mores bars.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">I had only made this once before, so I was a little nervous they weren't going to turn out...but they did! These are easier to make than the cookies, so if you're pressed for time, I'd try this route. I would recommend spreading a layer of cookie dough on the bottom of your pan and letting both that and the rest of the dough chill. It was much easier to work the dough for the top because it was not quite so sticky. Enjoy!</span><br />

<u>Stuffed S'Mores Bars</u><br />
<br />
2 stick unsalted butter, softened<br />
1 c. sugar<br />
3/4 c. brown sugar<br />
2 eggs<br />
1 T. vanilla<br />
3 1/2 c. flour<br />
1 t. baking soda<br />
1 t. Kosher salt (do no substitute other types of salt; the coarseness makes it great!)<br />
2 cups semi-sweet chocolate chips<br />
Graham crackers (break sheets in half)<br />
3 Hershey chocolate bars (broken into chunks of three pieces)<br />
Large marshmallows (cut in half with a wet, sharp knife)<br />
<br />
Combine butter and sugars with a mixer until smooth and creamy. Add eggs and vanilla. Mix until well blended. Add one cup of flour, soda, and salt. Mix. Continue mixing in flour one cup at a time until all 3 1/2 cups have been added. (It makes very stiff dough!). Mix in chocolate chips. Layer bottom of a 9x9 pan with half of the dough and refrigerate. Chill other half of dough. Once chilled, layer a sheet of graham crackers throughout pan. It does not completely cover it, so I broke sheets in half for the bottom row. Place Hershey bars on top of each sheet. Add a marshmallow and top with another sheet of graham cracker. Flatten balls of cookie dough and place on top of the graham crackers doing your best to cover entirely. Bake at 350 for 30-35 minutes. Serve warm. <br />

Many of the bloggers I follow are also published authors and I have chosen to read many of their books. I must say, I have felt truly inspired by many of them. Today I finished <u>Rhinestone Jesus</u> by Kristen Welch. Her blog, <a href="http://wearethatfamily.com/">We are THAT family</a> is very well written and I agree with her parenting philosophy, so I assumed I would enjoy reading her book.<br />
<br />
Wow. Did I ever. She encompasses much of what I aspire to do in life: be a good mother, live a faith-centered life, serve others where God sees fit, and to share my story. I admire those who have been able to be successful and achieve their goals, while continuing to be a "normal" mother raising her family. The book turned out to be the pep-talk I've been so desperately craving.<br />
<br />
Lately I've lost steam. I have my hands in a lot of pots, but I'm going to take the advice of the author and focus on my "one." Rather than spreading myself too thin and giving a less-than-all effort, I am going to focus my service in an area I feel passionate about: education and literacy. I am so thankful this is also a project my entire family can assist with and relate to as well.<br />
<br />
The charity I co-founded just one year ago exceeded our expectations in our first year and we are looking forward to impacting even more children next year, but there is a lot of work to be done. We have received many blessings during the inaugural year of From Cover to Cover, but it has been a challenge to build this from the ground up with my partner and dear friend. We have a solid vision, feel our mission is important, and have seen first-hand the impact the gift we provide these children has. We know we can make a tremendous difference right here in our community. The hardest part is sharing our mission and convincing others how truly important this project is.<br />
<br />
As with all non-profits, we rely on donations and volunteers to achieve our goals. Fundraising, awareness activities, and coordinating events requires a lot of time and dedication. We have received tremendous support, but we need to grow our supportive base and it is hard to do! I know we just have to keep believing He will provide, but there are days when I feel like we have an impossible mountain to climb. We will continue to move forward and I pray soon we will have more help to achieve our goals! This is my "one." This is my "yes!"<br />
<br />
Are you feeling the pull towards something and afraid to say, "Yes!" If you need a little inspiration, I highly recommend reading the book. Maybe you just need a little nudge to take that first small step. Whatever the case, now is the time!<br />

We headed to the east coast to relax on the beach for a week. We were all super excited, but leading up to our departure my husband and I got a bit nervous about the 17 hour car ride (one way!) we were about to embark on. We had high hopes for a successful trip so this can become our way of travel. Buying plane tickets for our whole family is expensive, but I think hauling all of our stuff around an airport and keeping track of the kids is more painful!</span><br />

<span style="font-family: Georgia, Times New Roman, serif;">The planning for our long ride began a few weeks before we left. I found many great ideas I hoped would keep the kids occupied in the van online and came up with a few of my own, too. I was excited to see what was a hit and prayed our kids would enjoy the trek across the U.S! </span><br />

Most were inexpensive gems found at the dollar spot at Target or books I purchased from my <a href="https://y3225.myubam.com/">Usborne </a>business or Scholastic. I enjoyed packing them into surprise bags for each of the kids and prayed they would provide some much-needed entertainment on our long drive. I found some awesome lap desks at Gordman's on clearance as well, so they each had their own little multi-purpose desk to work at.</span><br />

I found many great printable pages for <a href="http://www.momsminivan.com/">scavenger hunts</a>, <a href="http://www.thedatingdivas.com/tara/the-road-trip-date/">license plate games</a>, and tic-tac-toe which I included in them. For my oldest son, I printed out an outline of each state we were going to drive through and a map of the U.S. The goal was for him to color in each state as we passed through on the large map and then write about what each state looked like or any other tidbit of information he found interesting in the outlined states. It didn't turn out quite as I had hoped, but it's the thought that counts, right?!</span><br />

Using a cookie sheet from The Dollar Tree, I created this road (and train track on the opposite side) so he could drive magnetic vehicles and trains as we were driving down the road. He is three, and can have a difficult time sticking with anything for long, but these are a favorite. Several times throughout the trip he pleaded for his "homework." I truly cannot recommend these enough!</span><br />

<span style="font-family: Georgia, Times New Roman, serif;">When it was all said and done, our first family road trip was a huge success. The kids were entertained, had fun with their activities, and were able to see the sights on our trek across the U.S. We made sure to stop about every three hours and let them run around, stretch out, and just get some fresh air. I packed a little sack with bubbles and whiffle balls to provide some fun during our stops. We also traveled with a fully stocked cooler of drinks, snacks, and lunch or dinner items for a picnic to save money and time. Additionally, I prepared a snack bag full of goodies I could easily access during the drive and some small baggies to put them in. It worked out great! </span><br />

<span style="font-family: Georgia, Times New Roman, serif;">Lastly, I packed a small bin I kept behind my seat with the following items:</span><br />

<span style="font-family: Georgia, Times New Roman, serif;">-a box of Kleenex</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">-gallon Ziploc bags (for car sickness)</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">-a few old rags</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">-a bag of batteries and little screwdrivers (for toys needed help!)</span><br />

<span style="font-family: Georgia, Times New Roman, serif;">My goal was to be prepared for most anything that came our way unexpectedly. This trip was pretty uneventful. </span><span style="font-family: Georgia, 'Times New Roman', serif;">I am looking forward to more road trips in our future and using some of these ideas again!</span><br />

What Better Time than Now?Last fall I was talking with some neighborhood friends about having a block party. They suggested I take the lead and put one together and without hesitation I did. I quickly had a great group of people to assist and we began planning. The goal was to create a laid-back, casual event to give people living within our subdivision the opportunity to enjoy an afternoon/evening together with their neighbors. It would not be anything over-the-top: simplicity was the key.<br />
<br />
We live in such a busy time many of us do not even know who lives a few doors down. Isn't it a shame we may be missing out on some wonderful friendships for ourselves and our children because we're too busy to take the time to reach out and introduce ourselves to our neighbors? Some of us may feel intimidated or shy to say a simple "hello" or afraid of feeling uncomfortable. Whatever your reason, put it aside, make the first move, and get to know the people living around you!<br />
<br />
I am thrilled we put this event together and encouraged many of my neighbors connected with others they had never met (our family included!). The days of the Welcome Wagon, casseroles, and random rings of the doorbell seem to be gone, but we can swim against the tide. Take a chance! Perhaps you will be the answer to a stay-at-home mom's prayer for companionship or your child will find a lifelong friend just down the street. You may be able to offer help to someone who is struggling, be a welcome friendly face to someone who is sad about what they have left behind, or able to provide a connection they have been searching for. Whatever the outcome, sitting idly on the sidelines will certainly leave the door closed.<br />
<br />
This is a great lesson for our children in hospitality and being a good neighbor and a simple one at that! If you're still feeling hesitant, turn it into a family event: bake something yummy and drop it off at the new neighbor's house. In the end, you'll be glad you did!<br />
